What is a lectin-free diet?
Lectins are plant proteins that plants use as a chemical defense against predators. Their consumption has been linked to the occurrence of chronic inflammatory diseases in humans. For whom is a lectin-free diet ideal?
For all those who have already "tried everything" for their health and are looking for a root cause solution, and of course for all those who want to achieve their optimum energy, performance and joie de vivre while loving enjoyment: Our crumbs, for example, are also very popular in "haute cuisine".
How does a lectin-free diet work?
A lectin-free diet reduces the burden on the body, allowing it to become more resilient, use fewer resources, and ultimately heal better. It's not about consuming superfoods, supplements, etc., but rather about what you avoid: ingesting lectins and other harmful substances through food. Our TOBIO concept allows you to continue enjoying favorite dishes like schnitzel, lasagna, pizza, pancakes, etc., but using different ingredients than before.
For which ailments might a lectin-free diet be helpful?
According to doctors, chronic inflammatory and metabolic diseases in particular are linked to the consumption of lectin-containing foods. The symptoms can be varied: from digestive problems such as diarrhea or pain to joint pain,

Which foods contain lectins and which are lectin-free?
Grains, pseudocereals, nightshade plants, and legumes contain lectins. The protein casein, found in cow's milk, also has a similar effect to lectins. Otherwise, virtually all animal-based foods, such as meat from ruminants, eggs, sheep/goat/buffalo cheese, and fish, are considered lectin-free. Furthermore, pasta made from millet, sorghum, plantains, arrowroot, and cassava is lectin-free.

What should I eat if I follow a lectin-free diet?
It all depends on your preferences: For example, we really enjoy Wiener Schnitzel, steak, pizza, lasagna, or hearty Käsespätzle (cheese spaetzle), and for dessert, pancakes (or "Palatschinken" as we call them in Austria), Kaiserschmarrn (shredded pancake), or quark/Topfenknödel (quark dumplings). There are also many vegetables that are lectin-free and therefore suitable as side dishes, such as asparagus, broccoli, onions, leeks, cauliflower, etc.
In principle, almost all favorite dishes can be made lectin-free, and enjoyment should always be the main focus.

Is a lectin-free diet balanced and will I get all the nutrients I need?

There is always the possibility, through the choice of ingredients, of either ensuring a good supply of nutrients or creating deficiencies. Generally speaking, there are no relevant nutrients in lectin-containing foods that are not also found in lectin-free alternatives.
Is there any scientific background information on lectins?
Yes, under "Knowledge" you will find well-founded information about lectins, their effects on the gut, and possible inflammatory processes. The content is based on current scientific findings and shows why a lectin-free diet can be beneficial.
Are lectins destroyed by cooking?
Lectins vary in their heat instability, meaning that some lectins denature more than others when heated. Generally speaking, heating can reduce the lectin content, as in legumes, but it cannot eliminate them completely. Therefore, one can only speak of "low-lectin" foods. Other lectins, such as those found in grains, are hardly reduced by heating. As a rule, almost everyone experiences an inflammatory response to heated, lectin-containing foods – measurable, for example, by an increase in hsCRP in the blood.
Are lectins the same as gluten?
Gluten is a lectin, or more precisely, gluten is made up of lectins (gliadin). Avoiding lectins automatically means avoiding gluten, but not vice versa.
How long do I "have to" eat lectin-free to notice an improvement?
This is highly individual. We advise all our customers to try it consistently and at 100% for three months. Then they usually get the desired results.
How do food intolerances develop?
Lectins can open so-called "tight junctions" because they bind to their receptors. This allows the lectin, along with other undigested food components, to enter the bloodstream. The immune system recognizes these foreign proteins and mounts an immune response. With repeated consumption, immunoglobulins are subsequently produced, and their detection is used to diagnose food intolerance.
How do I bake with TOBIO baking mixes?
Basically, it's just like you're used to: baking mix, water, yeast, salt. However, you need slightly less of each ingredient compared to grain flour. For example, a simple yeast dough consists of 500g of light organic baking mix, 800ml of water, and one packet of dry yeast.

Are tomatoes lectin-free if you peel and deseed them?
No. Peeling and deseeding a tomato reduces the lectin content, but does not eliminate it.

Why are vegetable oils not recommended?
Vegetable oils consist of fatty acids that, according to studies, have a negative impact on long-term health. Furthermore, significant quantities of oils of plant origin have never been present in human evolution.
