Lectin-Free White Sweet Potato or Cassava Hash Browns


Crispy on the outside, soft on the inside: These hash browns are based on the classic preparation with grated potatoes, but are completely lectin-free, gluten-free and made exclusively with organic ingredients. Instead of potatoes, white sweet potatoes or cassava are used. They are traditionally fried in organic beef tallow for maximum flavor and an extra crispy crust. Classic hash browns consist of grated potatoes, which are fried until crispy without flour or egg.


Ingredients for 4 portions


Option 1: White Sweet Potato

  • 500 g organic white sweet potatoes
  • 1 small organic onion, finely grated
  • 1 tsp organic crystal salt
  • ½ tsp freshly ground organic pepper
  • 2 tbsp organic chives, finely chopped
  • 3–4 tbsp organic beef tallow

Option 2: Cassava

  • 500 g organic cassava root, peeled
  • 1 small organic onion, finely grated
  • 1 tsp organic crystal salt
  • ½ tsp freshly ground organic pepper
  • 2 tbsp organic chives
  • 3–4 tbsp organic beef tallow

Preparation


1. Grate vegetables

Grate white sweet potatoes or cassava coarsely.


2. Remove moisture

Place the grated vegetables in a clean kitchen towel and squeeze firmly. The drier the mixture, the crispier the hash browns will be. Removing excess moisture is an essential step for a crispy texture.


3. Season

Mix with grated onion, salt, pepper, and chives.


4. Shape

Form flat patties with your hands or place the mixture directly into the pan and press lightly.


5. Fry

Heat the organic beef tallow in a heavy cast iron pan.


Fry the hash browns over medium heat for 4–5 minutes per side until golden brown and crispy. Avoid moving them as much as possible while frying to allow a stable crust to form. For extra crispy hash browns, let the mixture brown undisturbed first.


6. Serve

Serve hot immediately.
