Ingredients for lectin-free Keto Chocolate Bars
Chocolate Base
- 90 g beef tallow
- 75 g allulose
- 50 g unsweetened cocoa powder
Topping
- chopped hazelnuts to taste
Caramel Sauce
- 50 g allulose
- 13 g dairy-free butter alternative or additional beef tallow/coconut oil
Preparation
1. Prepare the chocolate mixture
- Slowly melt the beef tallow over low heat.
- Stir in allulose until largely dissolved.
- Sift the cocoa powder finely and stir in thoroughly until a smooth mixture is formed.
2. Fill molds
- Distribute the mixture evenly into 6 small silicone molds or a baking pan lined with parchment paper.
- Briefly smooth out.
3. Prepare caramel sauce
- Melt allulose in a small pan over medium heat. Do not stir, only swirl.
- Once it turns golden brown, carefully stir in the butter alternative or fat.
- Stir until creamy for a short time and remove immediately from heat.
4. Finish
- Spread caramel sauce over the chocolates.
- Sprinkle with chopped hazelnuts.
- Chill for at least 1 hour until firm.
Tips
- For extra crunch, dry roast the hazelnuts beforehand.
- Store in the refrigerator – this keeps the bars nice and firm.
