Why beef tallow?

Beef tallow is a traditional natural fat that fits perfectly into a ketogenic diet. In these chocolate bars, it provides a creamy consistency, a stable bite, and a particularly pleasant mouthfeel.

Benefits of beef tallow

  • Rich in saturated and monounsaturated fatty acids as well as fat-soluble vitamins
Provides long-lasting energy, structural components (phospholipids), and supports ketosis.
  • Natural and unprocessed
Unlike many industrial vegetable oils, high-quality tallow is minimally processed.
  • Heat and oxidation stable
Very stable against heat and storage, making it ideal for recipes.
  • Contains fat-soluble vitamins
Depending on quality, tallow can contain vitamins A, D, E, and K2.
  • Highly satiating
Supports stable energy and can reduce cravings.

Why in this recipe?

Tallow harmonizes surprisingly well with cocoa and creates a firm, melting chocolate texture – perfect for homemade keto chocolate bars without seed oils or dairy products.
