Lectine-Free Caesar Salad – creamy, with high-quality protein and healthy fats
A lectine-free Caesar Salad has everything a modern low-lectin diet needs: tender beef fillet, crisp lettuce, and a creamy Caesar dressing based on high-quality C8 Organic MCT oil. The recipe is gluten-free, protein-rich, and provides quick energy without unnecessary additives.

Ingredients for 2 servings
- 200 g beef fillet
- 1 large garlic clove, finely chopped
- 1 tsp Kosher salt (or more to taste)
- 1 large egg yolk
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 90 ml C8 Organic MCT Oil
- 3 tbsp Pecorino, finely grated
- 1 small iceberg lettuce or alternatively chicory or endive lettuce
- Freshly ground black pepper
- Optional: additional Pecorino for serving
Preparation
1. Properly sear the beef fillet
Remove the beef fillet from the refrigerator about 20 minutes before frying and lightly salt it.
Heat a pan to high heat and only use heat-stable, natural fats:
- Beef tallow
- Ghee
- Sheep butter
Sear the meat for about 2–3 minutes per side, depending on desired doneness. Then let it rest briefly and cut into thin strips.
2. Prepare Caesar dressing with C8 MCT oil
Crush garlic and salt into a fine paste. Whisk egg yolk, lemon juice, and Dijon mustard in a bowl.
Slowly incorporate the C8 Organic MCT oil while continuously stirring until a creamy dressing forms. Then fold in the Pecorino and season with pepper.
3. Arrange the salad
Cut the iceberg lettuce, chicory, or endive lettuce into bite-sized pieces and mix with the dressing. Divide between two plates and arrange the beef fillet strips on top. Serve with additional Pecorino, if desired.
