Lectin-free brioche basic recipe

Baking brioche with TOBIO


  • 500g Light Baking Mix
  • 800ml sheep's milk
  • 2 eggs
  • Add 1 packet of yeast:
    • Dry: Mix with baking mix beforehand
    • Fresh: Dissolve in sheep's milk beforehand.
  • pinch of salt
  • 50g allulose*
  • Optional:
    • A pinch of organic vanilla
    • grated organic lemon zest

Instructions for lectin-free brioche

  • Whisk the eggs with a little sheep's milk and the allulose.
  • Mix all the remaining dry ingredients together, then add the egg/milk/allolose mixture and the remaining ingredients.
  • Knead very well and for a long time! A food processor with a dough hook is best suited for this.
  • Only through kneading does the dough acquire its elasticity and fine pores.
  • Leave to stand covered for 2 hours at room temperature.

Tip : The finished dough can now also be left in the refrigerator overnight if you want to bake fresh brioche rolls for breakfast...

Baking preparations


  • Take the dough (or parts of it) and carefully shape it as desired (buns, crescent rolls, braided loaves, yeast dumplings, etc.). Avoid kneading it too vigorously, as this will cause it to lose its fluffiness.
  • When shaping, sprinkle some of the TOBIO baking mix onto the baking surface and onto your hands to prevent stickiness and for the later crust.
  • Cover the dough pieces with a cloth and let them rest ("proof") for 1 hour.

Bake


  • Preheat oven
  • Once the temperature is reached, place the dough pieces in the oven and bake them as follows, depending on their volume:
    As a guideline, bake crescent rolls for approximately 45 minutes at 180 degrees Celsius. Larger baked goods, such as braided yeast bread, will take correspondingly longer.
