Lectin-free apple quark casserole with sheep's milk & allulose

A creamy, fruity curd casserole with sheep's milk products, which can be prepared seasonally with apples or pears. Instead of classic sugar, we use allulose, and the flour is replaced by a combination of TOBIO Organic Pastry Flour Mix and organic arrowroot starch.

Ideal as a warm sweet dish, dessert, or sweet meal – simple to prepare and wonderfully aromatic.

For approx. 8 portions
Preparation time: approx. 30 minutes
Baking time: approx. 35 minutes
Baking tin: approx. 20 × 28 cm


For the curd mixture

  • 250 g organic sheep's curd
  • 125 g organic sheep's sour cream
  • 50 g allulose
  • 2 organic egg yolks, size M
  • 1 pinch of sea salt
  • 1 tsp organic vanilla powder or a few drops of extract
  • 30 g TOBIO Organic Pastry Flour Mix
  • 30 g organic arrowroot starch

For the topping

  • 2–3 organic apples or 2–3 organic pears, depending on size
  • optional: a little organic cinnamon

For the tin

  • 50 g organic sheep's butter

Preparation


1. Prepare the casserole mixture

Preheat the oven to 170 °C (338 °F) top/bottom heat.

Place the sheep's curd, sheep's sour cream, allulose, egg yolks, sea salt, orange zest, and vanilla paste in a bowl and whisk into a creamy mixture.

Mix the TOBIO Organic Pastry Flour Mix and arrowroot starch in a 1:1 ratio. Then sift over the curd mixture and gently fold in.


2. Prepare the apples or pears

Wash the apples or pears and peel if desired. Remove the core and slice the fruit into thin wedges.

Tip: For an especially aromatic version, sweet-tart apples are ideal. For pears, ripe but still firm fruit is perfect.


3. Layer the casserole

Distribute the sheep's butter in the baking tin and let it melt briefly in the preheated oven.

Pour the curd mixture into the tin and smooth the surface.

Arrange the apple or pear wedges in a slightly overlapping pattern on the mixture. Sprinkle with a little cinnamon if desired.


4. Baking

Bake the casserole on the middle rack for about 30–35 minutes until the surface is golden brown and the fruit is soft.

Let it rest for a few minutes afterwards.


Serving

The apple or pear curd casserole tastes especially delicious lukewarm. If you like, serve it with a spoonful of whipped organic sheep's cream or a little cinnamon.


🍐 Seasonal Tip

In autumn, the casserole tastes particularly wonderful with ripe pears and cinnamon. In winter, you can add a little cardamom or a pinch of real bourbon vanilla for a warm aroma.

TOBIO Recipe Tip

The combination of 50% Organic Pastry Flour Mix + 50% arrowroot starch is a great way to adapt a classic sweet dough recipe. TOBIO recommends arrowroot starch, among other things, for fluffy cakes.

Use organic quality for all ingredients whenever possible, especially for the sheep's curd, sheep's sour cream, sheep's butter, eggs, strawberries, and oranges.

Are apples, pears & co allowed now?

First of all: everything is allowed; the question is: what is my goal?

In our philosophy, we pay attention not only to lectins but also to other potential hazards in plant-based foods. This includes fructose, or fruit sugar.
