Tomato-free Ketchup (lectin-free)
Anyone who wants to avoid tomatoes or follows a lectin-free diet doesn't have to miss out on the popular taste of ketchup. This tomato-free ketchup impresses with an intense color, natural sweetness, and a wonderfully creamy consistency. Beetroot, carrots, and celery ensure a balanced aroma, while the subtle acidity of vinegar and the natural sweetness of allulose perfectly round off the classic ketchup flavor.
Ideal as a dip for vegetables, meat, burgers, or fries – and completely without tomatoes.
Ingredients
- 250 g onions
- 100 g celeriac
- 100 g carrots
- 100 g beetroot
- 1 whole head of garlic
- approx. 150 ml water (a little more if necessary)
- 10g parsley
- Tablespoon TOBIO Organic MCT C8 Oil
- 2 tbsp vinegar
- 1 tbsp Aceto Balsamico cream (optional)
- 1 tsp salt and pepper to taste
- 4 tbsp allulose (to taste)
- 1-2 tbsp TOBIO Light Organic Baking Mix
Preparation
- Sauté the onions in a little TOBIO MCT C8 Oil over low heat until translucent.
- Add the whole head of garlic, carrots, celeriac, and beetroot and sauté gently for about 10 minutes.
- Add water, parsley, vinegar, salt, pepper, and allulose. Bring everything to a boil.
- Then let the sauce simmer over low heat for 90–120 minutes without a lid. Stir occasionally so that as much liquid as possible evaporates and a thick, concentrated consistency is created.
- Shortly before the end of the cooking time, stir in a heaping tablespoon of TOBIO Light Organic Baking Mix and let it simmer for another 5 minutes.
- Let the ketchup cool down completely.
- Then place in a high-speed blender and purée for 2–3 minutes on the highest setting until a particularly fine, smooth, and creamy consistency is achieved.
- Finally, season to taste with allulose, vinegar, and salt and pepper. If you prefer a slightly sweet and fruity note, you can additionally stir in a little Aceto Balsamico cream.
Tip
The ketchup tastes even more aromatic after a few hours in the fridge, as the spices and flavors optimally combine. Stored in an airtight container, it will keep for several days in the fridge and is excellent as a dip, burger sauce, or BBQ companion.
